Nutritional benefits of cabbage microgreens
Red cabbage microgreens contain many of the nutrients. These nutrients include vitamins A, B1, B2, B3, C and K. Other essential nutrients which are present in red cabbage include zinc, manganese, iron, calcium and beta-carotene. There are carbohydrates present in red cabbage, but very few lipids.
Taste and use of cabbage microgreens
It’s possible to cook red cabbage, although it can also be eaten raw; to add crunch to a fresh salad. It’s the perfect ingredient to be used on a sandwich and it can also be included in a pasta dish or risotto.
Red cabbage microgreens can lose that famous red shade when they’re cooked; they tend to take on a blue or brown colour. However, if an acidic element such as lemon or vinegar, is added to the cooking water, the red colour can be maintained.
This means that red cabbage can be an attractive element of a dish as well as a healthy one.
