Apium graveolens dulce
Dual-attitude variety with a large white-fleshed root and a rather pronounced aerial part; both can be used in the kitchen in multiple preparations.
The aerial part (reeds) is used as that of classic celery, excellent for flavoring salads, soups and minestrones. The root can be grated, boiled or used as mashed.
